Spring
The spring blossom shapes the surroundings of our first harvest. Which plants contribute to the honey in any season depends on the location, the weather and where the bees fly.
Regional harvests · Kept separate by origin
Kaufungen, Liebenau and our Kassel locations: behind every name on a jar is an apiary we know and care for.
The origin stays visible
We are Johannes and Philipp Ballier. Our bees live in Kassel, Kaufungen and Liebenau. We keep the honey from each location and harvest separate, so every jar can be traced back to its origin.
The Kaufungen photograph shows the garden where our colonies live. Gardens and the green surroundings are part of this setting. In Liebenau, the view opens out towards the agricultural landscape of North Hesse. These different surroundings are what make the origins interesting to us.
Get to know our apiariesSpring & summer
The landscape around our apiaries changes throughout the year. What is in flower, how the weather develops and what the bees find vary between spring and summer — and from one year to the next.
That is why we keep the spring and summer harvests separate. The location name tells you where the honey comes from; the harvest season helps you place it in the beekeeping year. Neither is a promise of a particular plant species or an unchanging flavour.
The harvest year is part of a honey's origin too. The years currently available are listed with each honey on Honig aus Kassel.

Later in the year, the bees find a different range of forage around them. We keep the summer harvest separate, so it remains a distinct part of the beekeeping year.
Liebenau · North Hesse
Liebenau adds another North Hesse location to our garden and city apiaries in Kassel. The photograph shows our hives beneath trees, surrounded by dense greenery. It is the actual home of our bees, with a glimpse of the surrounding landscape.
Here too, we keep every harvest linked to its location. Honey from Liebenau and honey from Kaufungen each retain their own origin.
A look at our jars
